Hey everyone! Today I wanted to show you how to make this super easy mug cake. I really love making mug cakes but they often turn out slimy or dry and hard. However, this recipe is absolutely perfect! The consistency is awesome, plus, it's healthy so it makes a great snack!
You will need:
1. 3 tbsp almond milk
2. 1 tbsp olive oil
3. 2 tsp cane sugar
4. 1 tsp honey
5. 3 tbsp gluten free flour
6. 2 tbsp rolled oats
7. 1 tbsp chopped pecans
8. 1/4 tsp baking powder
9. 1/4 tsp cinnamon
10. 1/4 tsp vanilla extract
11. 1/8 tsp nutmeg
12. 1 tbsp almond butter
Firstly whisk together the dry ingredients in a mug then add in the remaining ingredients.
For the almond butter, gently place a spoonful into the center of the cake. Don't stir it in or push it down to far, just let it be slightly submerged.
Put the mug in the microwave for 1 minute on full power.
Add another 30 seconds then check the consistency with a toothpick. If it is still not completely cooked all the way through, add 30 more seconds.
I like to add about another tbsp of chopped nuts on top of the cake for a little more flavor.
